I dunno if you guys notice but when I stop (shut off ignition) after driving for awhile, my engine makes a ding ding ding sound. Anyone have any idea what that is?

is it the lights on or key in ignition ding or ding from under the car? if its from under the car its most likely the cats. thats what they do all they are is REALLY hot catalyst bouncing around in there.
If you happen to open the door before you remove the key from the ignition... It will make a ding ding noise as Fordtech stated. Same w/ the lights on. The cat made more of a popping noise in my case.
It's not the noise from not removing the key, or forgetting to turn off the lights. It's from under the car. Is this normal? It sounds like something is getting sizzled If it's the cat that's not really a big deal right?
if u have a stock exhaust, it makes sounds as it cools down, cuz when its hot its expanded n when it starts to cool down it starts to shrink back, well i used to have that on my civic, but i dunno about urs, i noticed it went away when i put an aftermarket exhaust on
When you car cools down you are going to hear some squeaks and dings as the metal and parts shrink back to size. Its normal. Its usually an irregular clink and ping noise.
OMG its the cats. as i said before when the catalysts inside get hot the bounce all around. and when you turn the car off the cats are still hot. so therefore they are still bouncing around!! WOW
i say its the cats, heres a good way to find out, take off your cats and drive it around like you usually do, when you cut the car off if it still makes that sound then its the oilpna if not then bingo youve found your problem.
