9 and 3 are where your hands should always be. and do hand over hand as you are turning the wheel never hook oror shuffle steering ( it upsets the cars ballancing the way the wheels mvoe while shuffling) and the only time your hand should come off the wheel is then you are shifting...

That's true.

I used to 1 hand constantly, my reasoning was "my other hand is for the sidebrake" (that I rarely used)

But, as I got faster and faster I didn't feel comfortable 1 handing anymore, it felt too dangerous 1 handing @ over 50mph. So I've basically taught myself to drive w/2 hands over the past 6 months.

If you watch professional drivers, their hands never leave the wheel, there's constant input. That's how it should be if you're drifting, as the car travels sideways over bumps and shit you should have constant steering input to maintain your line and angle, etc. Now the only time my hand leaves the wheel (when drifting) is for a sidebrake initiation, or sidebrake angle control. My lines have smoothed out and there's no end-of-drift squirreliness that low power cars get (BTW if the cars whipping back on you, you're holding the counter steer too long, you need to feel for the end of the drift before you actually get there, but that's another topic).

It'll take some getting used to, but if you're diligent it'll become habit, and you'll improve as a driver.
